I stink at designing support vehicles, so anyone have stats on some motorcycles?

There are stats.   There Monocycles that were published in TRO:Vehicle Annex (later Revised.)

Sarna has couple listings for them: Mótuö Chë Shang No. 2 and the Bluestreak.
