Jumping and Kicking

This question came up today, can you kick after jumping as well as shoot? Or is it all just Piloting modifiers afterword?
I don't set an example for others. I make examples of them.

Unless you're performing a DFA, a jumping mech ends the movement phase back on the ground. As such, you can do anything that any other mech that is standing on the ground can do.

Yup.  I have long had mechs jump into someone's rear, or if they were next to a hill, to the top of it, so i am 1 level above them and thus my kicks would go on the punch chart.
It's not who you kill, but how they die!
You can't shoot what you can't see.
You can not dodge it if you don't know it's coming.

Another question, when a mech collapses a building by falling through the roof.  Do the walls remain standing or is the whole hex rubble?

Whole hex is rubble. When a building hex collapses, that applies to the whole hex. I can only think of two exceptions:

If a building that is sitting on top of a buried Castle Brian structure collapses, I don't think the Brian collapses as well.

If a building in a hex also containing a mobile structure collapses(likely due to the entry of said mobile structure into that hex), the mobile structure itself does not collapse.
