On the AS unit cards the top line above the primary name appears to be the variant name. Some are in (parenthesis) while others are in "quotes." They seem, based on context, to denote unique variants, but what is the official RAW meaning of these designations and is that meaning specified in the RAW anywhere (if so, where)? What is the difference between the two? Are there any rules attached to these variant designations, or are they just flavour/lore? For example, is there a rule that a unique variant can only have one copy of said unit in any army? What if two players in a tournament field identical unique variants?

For example:
Daishi "Widowmaker" vs. Daishi (Hohiro)

Thanks in advance for clarifying this confusion.

“Widowmaker”, the mech itself is named Widowmaker. 
(Hihiro) is the personal configuration created by Hohiro.  The MechWarrior is named Hohiro, not the mech.

They are names, and they tell you what they are called. They are not rules.
If they are unique, that’s reflected in the faction availability on the MUL where it will be tagged unique.
The unit card doesn’t have rules about how/when to use it. 

Tournament rules are up to the person/people organizing the tournament.

Further, a number of unique-tagged variants are not the sole extant example of that unit. Small prototype runs of up to a dozen have been marked as Unique as well. Again, there are no game rules attached to this designation and serve as lore reference.

Perfect thank you. Can you please give me an example name of a unit on the MUL that is tagged unique, so I can see where/how it appears?

Under faction availability, open Clan Invasion era. You will see Draconis Combine and Unique.  It stays that way for each era through the Jihad, until the Early Republic era it just says extinct.
