Hexmap Software?

I'm currently looking at trying to get a few custom hexmaps put together for use online, however, I'm either having to draw them myself, which looks alright but is also very time consuming, or using free hexmap creators online which can do the job alot more quickly... but aren't anywhere near as good with the final result.

Are there any good hexmap creators out there that can be used to create BattleTech style maps to a decent standard and relatively easily?

I'm not sure if it's still around, but there was an official map making program called Heavy Metal Map which has the official map sheets for printing, or you can edit them, or make your own maps from scratch. Just search for Heavy Metal Pro Battletech and you should be able to find their store.

You can check out the various hex map creation kits available through itch.io
Otherwise consider acquiring hex sheets in image format and putting them into the background of a VTT software such as Roll20 or Tabletop Simulator. Both have worked for me in the past with decent results.

There isn't a conclusive solution yet, but Heavy Metal Maps received mention along with other concepts such as getting MegaMek to generate maps.

MegaMek is a good choice.  Look for work by Simon Landmine.
