Given that fighters can only use such alternate rounds against ground targets, using any Infernos against airborne fighters is overkill, as any hits will add a maximum of 0 heat.

You want to heat up a plane, you have to use a weapon that does so with the default ammo. Example: Plasma.

Well, technically a low-flying fighter could draw inferno fire from ground units. How often they both fly low and get close enough to actually enter SRM range is another question, but at least the target of a strafing, strike, or dive bombing attack should be eligible (effective range to target hex 0, altitude 4 or lower after accounting for any losses from the maneuver => weapon range 8 or less).

Ah, I see. Yep, the chances to hit a plane with Infernos are rare, but should always be taken. ASFs have VERY unforgiving heat curves, so odds are after a strike or strafe a plane will be right at the edge of heat dissipation, or overheating badly. Given that heat penalties that merely inconvenience a 'mech can be lethal to a fighter, any heat you can pump into them is a good idea. Do note that flaming bombers is futile unless you hit the full 15 heat and the plane has only the absolute minimum of heat sinks(or is already hot), since a plane delivering bombs generates no heat with the attack.

Well yeah, just like sometimes you can fry a Flashman but when he's charging, that's not going to be effective.
