is it Feasable to mount Multiple AMS?  or is that just un-necessary redundancy?

It is valid, yes. Each AMS can only engage one flight of missiles per combat phase.

So for example, If I had 4 AMS, and 4 mechs were shoting missles at me it would engage all 4  that's cool
