Nope. Not soon unfortunately.

Longer answer: That text is there to "future proof" the book.  But the work to separate out the conversion rules from the Companion and update with the errata hasn't started yet. And with all the work being done on Kickstarter related products, I'm not sure when that work will happen. Thus the not soon answer.

Is there any chance [not terribly soon, I know], that we could get straight up creation rules for AS without having to create in classic and then convert?

Short of pick the stats you want and calculate the PV?  I really doubt it.
Maybe a list of acceptable ranges as guidelines, but I can’t think of any way to do anything that would be rules that wouldn’t break BattleTech canon in a million separate pieces (ok, hyperbole, just two pieces Alpha Strike and BattleTech).

One more quick question, does the errata for conversion affect Assault mech conversion? Or just the adjustments for speedier units? Meaning could I feasibly use the conversion rules in the Alpha Strike Companion for a slow unit as written?

The faster units had their PV increased.  Conversion was not affected by that.
The Alpha Strike Companion + it’s posted errata is the current rule set for conversion.

I'd thought that the PV increase for speedy mechs would have been part of the errata. Was asking if the errata did anything to change the AS Companion conversion rules regarding slow mechs or just the change to light mechs and addition of unit types not covered.

Slow units only benefit by comparison: they stayed the same while almost everything with a bit of speed went up thanks to the errata.  A few slow jumping units went down, but that's because of the jump change.
