If you were running an infantry company to support an armor/mech unit what types of infantry do you think works best and what vehicles do you like to use?

Any PBI.

Maxim Hover Transport, especially the infantry variant with a 12t bay.

Later on Hiryo WIGE, 8t bay.

Both are fast enough to get to a position, get the infantry out, and get out before the nasty shooting comes close, but both have enough firepower to discourage scout mechs.

Depends on the mechs/Armor being supported. For the big slow stuff, I find mechinf to make very good escorts, able to keep up with your armored stuff a lot more easily than you might expect, and able to respond to close attackers coming from any direction.

For faster cavalry units, I'd go for heavily armored foot troops in fast hover or VTOL APCs. They can dash forward and quickly secure a strategic bit of dirt, allowing you to run some hammer and anvil action.

In heavily wooded or hilly areas, go for jump troops. They can navigate the terrain even faster than many non-jumping mechs and can be persistent harassers, keeping enemy mechs on the defensive lest they endure repeated backshots or kneecap attempts.

In cities, nothing beats motor infantry.

I would assume that "infantry" in this context refers to unarmored infantry, not Battle Armored sort.
BA are obviously excellent option for support, especially nowadays with all sorts of options available.

Jump infantry also work well if you are using  VTOL for transport- since they can jump out into any terrain, the VTOL does not even have to land.

Not front line:
Anhur (7 ton)
Cobra (10 ton)
Karnov (6 ton)

Front line:
CAV Infantry (4 ton)
Ripper (1t or 4t)
Shun (12 tons)

In general, I'd stick with foot infantry embarked in APCs or VTOLs.  The numbers are higher (meaning you have more AsTechs), and you can rely on their transports for mobility.

I’m a fan of jump infantry. I’m thinking about tinkering with mechanized hover.

Motorized platoons with five light AC/5 field guns firing from buildings is peak ridiculous
