(Answered) Standing up under Minimum movement rule

It is stated that "A prone Mech with only 1 MP available can make a single attempt to stand using this rule".

Does that mean that if Shadowhawk is prone, as it has 5 walking MP, it can try to stand up 3 times? (2 tries for 2MP each, and one extra try for the left over 1 MP)

Include page number references when asking questions, please.  That's in the rules.

"can make a single attempt"

The Minimum Movement rule is for times when you don't have enough movement to move how you want.  It lets you do one thing, and one thing only.  Normally a standing attempt costs 2 MP.  Under the Minimum Movement rule, you get an exception that lets you try to stand up once that turn, if it's the only bit of movement you make that whole turn, for only 1 MP.

If you have 5 MP available, then you don't have only 1 MP available, and so can't use the Minimum Movement rule.  As such, you'd just try to stand up as normal: 2 MP per try (and so two attempts per turn for a normal Shadow Hawk).  That leaves you with 1 MP: not enough for a third attempt that turn if needed.
