I've added some flock to the un-snowed ones but the guys on the right are varnished and afaik you can't go over varnish once its applied so I can't lighten them up like the others.

I may be reading this wrong, but you can paint after putting on your Matte Varnish/Sealer.  Unless you used gloss as your final step--paint won't stick to that very well, you are right.  But if you want to lighten up something after you've used a Matte Sealer it will stick just fine--I fixed a few cockpits this week that I had sealed ages ago.

Nah I just used Munitiorium varnish for it, so if I can go over them, then huzzah!
