Do rules exist for modding jumpships and the time it takes to take stuff on and off a jumpship?

As in customizations? I'm afraid not. Repair and replacement times are provided in SO pp. 183-185 however.
Regarding times for taking stuff on and off, that's best covered by the Moving Cargo rules in SO p. 42.
